I recently attended an event for a tasting menu for an upcoming wedding by Forks and Fingers and I was totally impressed with the fresh, unique and flavorful dishes that were beautifully presented. The summer chopped salad of golden beets, goat cheese, almonds, strawberries, fig glaze was heavenly… the watercress with queso fresco watermelon, red onion, jicama,and cilantro lime vinaigrette was delightful and an excellent prelude to the comforting melt in your mouth pomegranate braised short ribs on a bed of creamy sweet potato mash topped with pomegranate seeds…extraordinary! The Chilean Sea Bass was juicy and flaky…and the grilled prawns were perfectly cooked accompanied by a killer shrimp sauce and crispy scallion crostini…it goes on…with each dish skillfully prepared…. the mini penne alla vodka with crispy pancetta & shaved parmesan….sesame noodle with charred flank steak…chicken roulade with caramelized figs, goat cheese, pancetta & sage over aromatic saffron rice..a delectable lobster risotto…grilled Colorado lamb chop over truffled yukon mash with port glazed morels…This is not your average catered wedding fare…makes me want to get married again…and again…and… well…. you know 🙂 Truly outstanding.
